We ate almost the whole pie or rather Levi did!
Good to the last bite and lick of cool whip!Levi lost his first two teeth as you can read about in an earlier blog (I am playing blog catch up today), and we celebrated with a homemade strawberry pie and cool whip... his absolute favorite. He had 3 pieces of his reward! If we keep rewarding him in this fashion though, he may loose the rest of his teeth a lot sooner from sugar decay! Wanted to share this super easy recipe with you.
Strawberry Glaze Pie
1 qt. of strawberries, 3/4 cup of water, 2 Tbsp. of cornstarch, 3/4 cup of sugar, dash of salt, 1 baked 9 inch pie shell and of course COOL WHIP!
Crush 1 cup of red ripe strawberries then add the 3/4 cup of water and bring to a boil. Simmer 3 minutes. Strain then add enough water to make one cup of juice. Combine cornstarch, sugar and a dash of salt with the juice liquid. Bring to a boil and stir constantly until thickened. Let cool then pour on top of remaining strawberries that have been sliced and placed in the baked pie shell. We add cool whip after we cut our pieces or you can put on top of the whole pie. I liked this recipe because it did not require strawberry jello... something I don't regularly keep on hand.
